those are not lobsters! they are indeed jumbo river prawns. it is best kind of prawns to make tom yum. tomalley - the juicy fat in the head - makes the broth more flavorful. when my family goes out for dinner, if we are to order tom yum, we have to order crab fried rice too. it's always like this since i was a kid. trust me...they both are like soul mates!
